Godspeed does not make crowd pleasers. They make brewers' beers, and this is exactly that: bone dry, loud, and painfully precise.

Nose: Fresh yuzu zest rather than juice. White pepper, lemon pith, a thread of cellar funk from the house saison yeast. No added sweetness, just oil.

Poured at 6°C from a 355ml can into a Teku. Hazy pale straw under a white head that refuses to collapse. Carbonation sits near Champagne.

The pils / wheat bill carries the structure and Hallertau Blanc does the seasoning. At 5.2% and 25 IBU it sits where the style should, and Godspeed Brewery have resisted the urge to push it anywhere else.

The palate is where it earns the score. The Hallertau Blanc bitterness arrives early and holds through a finish dry enough to pull you straight back to the glass. Nothing sags in the middle, which is the failure mode for most saisons.

The whole point of a beer at 5.2% is the second and third glass, and this survives both. There is no cloying edge, no fatigue in the finish, and the hop character stays legible right through. That is harder to achieve than a big beer, and it gets a fraction of the credit.

Beers like this are why the saison section of this site exists at all. Godspeed Brewery have been making it for long enough that the consistency is no longer surprising, which does nothing to make it less impressive. If you are anywhere near Toronto, ON, go and buy it from the source.

Bought at Bellwoods Bottle Shop (in stock at the time of writing). Serve colder than you think. 4-5°C. Glass matters, so do not use a shaker pint.

If you see it, buy it. Buy the second one for the person who does not believe you.

Founded Hop Press in 2024 after one too many lost IPAs in the back of a fridge. Drinks more pilsner than water, prefers dry over sweet, and will argue about carbonation with anyone who stands still long enough.
